Degreening of Naval Oranges

Why degreening?

Degreening means getting rid of the green color and allowing the orange color of the peel to predominate.

The external colour of citrus fruits is more often related to climatic conditions than to internal maturity. In the beginning of the citrus season in Egypt, some cultivars still have an external appearance of immaturity with a green peel, but are in fact internally mature. The external appearance of the citrus is used by the consumer as an indication of quality and the green colour is associated with immaturity. Thus, degreening is becoming an effective method for improving the visual quality of mature citrus and preparing it for the consumer.

When does the degreening process becomes effective?

Only when oranges become internally mature, the degreening process becomes effective, since this process has only an external effect. Maturity levels are detected through undergoing laboratory tests that shows :

a) Sugar content          b) Juice Content       c) Acidity level

Degreening Process

In the degreening process, oranges are stacked in isolated degreening rooms and are exposed to the optimum climate conditions required for reaching the natural coloration all over the 24 hours of the day. Thus, the undesirable green color turns to orange in few days. Producers can operate and manage their degreening facilities in such a way that they can produce a product of high quality. This is successfully achieved by an accurate control and monitoring of temperature, humidity, ethylene, ventilation and air circulation.
